Pinewood Social Granola

We love the funky, relaxed vibe of the Pinewood Social. It's perfect for working and for meetings. As a result we spend many a morning in "booth #5" drinking cups of Crema coffee and meeting with Music City's creatives. The granola is perfect--a crunchy, nutty mix with creamy yogurt and fresh berries. They were good enough to share the recipe with us.

Ingredients

  • 1 1/2 cups rolled oats
  • 3/4 cup pumpkin seeds
  • 3/4 cup sunflower seeds
  • 1/2 cup sesame seeds
  • 1/2 cup coconut chips
  • 1/2 cup sliced almonds
  • 3/4 cup maple syrup
  • 1/2 cup extra virgin olive oil
  • 1/2 cup light brown sugar
  • 1 1/2 teaspoons sea salt
  • 1 cup dried cherries

Preparation

1.     Preheat the oven to 325 degrees.

2.     In a large bowl, combine all ingredients, except dried cherries, and spread out on a sheet pan in a single layer. Bake for 30 minutes, stirring periodically.  While baking, roughly chop the dried cherries and set aside. Remove granola and allow to cool. Add cherries.
